Daffodil Cornmeal...your healthy choice
Milled corn products provide an excellent source of antioxidant, especially carotenoids such as lutein. Carotenoids are yellow and orange plant pigments which are usually readily available for absorption from vegetables such as spinach, carrots and tomatoes.
The milling process makes the key nutrients of corn more readily available for absorption after digestion than they would be from many other foods. In fact carotenoids from milled corn products are just as high, if not higher than that of vegetables.
As a product of corn, Daffodil cornmeal is well known for association in the prevention of chronic diseases including colon cancer, cardiovascular disease and macular degeneration. The lutein found in cornmeal also helps with the lowering of cholesterol levels and protection from cataracts and other eye diseases.

CORNMEAL PUMPKIN BREAD
INGREDIENTS
- 1/4 cup DAFFODIL CORNMEAL
- 1/2 cup flour
- 1/2 tsp salt
- 1 cup sugar
- 1 tsp baking soda
- 1/4 tsp all spice
- 1/4 tsp nutmeg
- 1/4 tsp cinnamon
- 1 tsp vanilla
- 1/2 cup nuts
- 2 eggs
- 1/2 cup Chef Vegetable Oil
- 1 cup Pumpkin puree
- 1/4 cup water
Preparation Time: 10 minutes
Baking Time: 50 minutes
METHOD
1. Combine flour, salt, cornmeal, sugar, baking soda, nutmeg, cinnamon, and all-spice in a bowl.
2. Combine pumpkin, oil, eggs and water.
3. Chop nuts.
4. Add flour mixture to pumpkin mixture. Combine well, add nuts.
5. Scrape batter in a loaf pan. Bake at 180oC or 356oF until toothpick or skewer inserted comes out clean.
Makes 1 loaf
