Trans fat is the common name for a type of unsaturated fat that is produced during the hydrogenation of vegetable oils. In the hydrogenation of vegetable oils, hydrogen is added to unsaturated liquid oils to make them saturated and more semi-solid. Hydrogenation increases the melting point of the vegetable oils thus making them more attractive for use in formulating margarine and shortening products. However, during the hydrogenation process a side reaction takes place which convert some fat molecules into trans unsaturated fat. Trans fat maybe monounsaturated or polyunsaturated. There is also another class of trans fats called vaccenic acid that occurs naturally in trace amounts in meat and dairy products from ruminant animals. Trans fats are not essential in the diet and their consumption increase the risk of coronary heart disease by causing the levels of “bad” LDL cholesterol to increase while lowering the levels of “good’’ HDL cholesterol. It is recommended that trans fat be only consumed in trace amounts. At Seprod we do not hydrogenate oils to make margarine or shortening, hence our products are free of trans fats.
